Today I will be sharing a Jambalaya pasta recipe with your guys.

1 onion
2 bell peppers
2 andouille sausage
2 cloves of garlic
2 boneless chicken breast
1 teaspoon of Cajun seasoning
3 pinches of kosher salts
10 oz. Penne pasta
1 (15 oz. can) of diced tomatoes
4 cups of chicken broth
1/2 cup of heavy cream
1 cup of shredded cheddar
Chopped parsley
Black Pepper

In a large skillet over medium heat, heat up oil and add in the onion and bell peppers. Saute until they begin to soften, then add in the sausage and cook. Stir in the garlic and cook until it is fragrant, which about 30 seconds after placing in the garlic. Then add the chicken and Cajun seasoning. Season everything with salt and pepper. Stir often, until the chicken is cooked all they way through. Add in the penne pasta and stir until coated in the sausage and peppers. Then pour over the diced tomatoes and chicken broth. Simmer until the pasta is al dente and all the liquid is absorbed (about 20 minutes) Stir in the heavy cream and cheddar. Garnish with parsley and serve. Enjoy!
